Spätzle are fresh egg noodles.
The classic recipe for 1 portion calls for 2 large eggs, 50 ml water and 150 g flour plus salt.
If you like your spaetzle to be particularly high in protein , use 3 eggs and no water.
It also works the other way round. More water and just one egg also make nice spaetzle.
For particularly yellow spaetzle, only the egg yolk is used, and no egg white and no water.
Vegan spaetzle work particularly well with a so-called ' starch egg '. To make it, mix 1 tablespoon of starch with 3 tablespoons of cornstarch and add it to the flour. 1/2 teaspoon of turmeric makes the spaetzle a lovely yellow color.
Variety in spaetzle cuisine can be created by adding additional ingredients such as finely chopped herbs , tomato paste or ready-made spice mixtures such as pesto or curry cream , to name just a few possibilities.
Low-calorie spaetzle are made when the spaetzle have been left to cool overnight, as the cooling of heated starchy foods produces what is known as 'resistant starch', which is more indigestible.
