BASIC INGREDIENTS
Savory: We recommend salt as a base for your spice mix, as it also ensures that your spices last longer and is an inexpensive basic ingredient. This is particularly suitable for spices for making butter in the butter shaker.
Sweet: Whole cane sugar is a great choice for sweet spices such as orange or vanilla sugar. Conventional refined sugar works too, of course. For sweetly spiced butter, homemade buttermilk is our culinary insider tip.
HERBS & SPICES
Herbs: You can also use herbs you have grown yourself from your windowsill or garden for your spice mixtures. Organic quality, i.e. unsprayed herbs, is ideal.
Additional flavors: Your spice mixes will also taste particularly great if you have dried and then ground ingredients such as lemon peel, porcini mushrooms, jalapenos & chili peppers, garlic and onions - to name just a few.
DRYING INGREDIENTS
Dehydrators are the first choice in our latitudes for drying ingredients with a high natural water content, such as chilies, onions, mushrooms, tomatoes and peppers. They are already available at reasonable prices.
Herbs can be air dried . Freshly harvested herbs are tied together at the stem and hung upside down in a dry, airy place to dry.
GRIND & MIX INGREDIENTS
Mortars, coffee grinders and blenders are suitable for grinding and mixing the ingredients, to name just a few methods.
Some food processors even have their own programs and recipes for making common spices yourself.
FOR INSPIRATION:
Ready-made spice blends as a model: For inspiration, we recommend ready-made spice blends that you particularly like. Take a close look at the list of ingredients and try to make something similar yourself. However, some are so good that it just won't work. The art of spice blending is full of sophistication.
The art of omitting and substituting: Discover what effect it has on the taste if you use more of one ingredient or another or replace ingredients with other spices.
A worldwide journey of discovery : The world of spices offers a great journey of discovery. Spices come from all over the world and enrich our cuisine.
Important: The quality of your ingredients is crucial, especially when it comes to spices.
Reference work: The website www.kraeuterabc.de offers a lot of carefully compiled and verified information about many herbs that can be used as spices.
Healing spices: The healing effects of the respective spices discussed on www.kraeuterabc.de are always interesting. If you pay attention to this when putting together your own spice recipes, you will kill two birds with one stone: your homemade butter with the homemade butter spice tastes delicious and is healthy.
Butter with a win-win effect: The so-called lipophilic active ingredients from the spices dissolve very well in butter. And the others, which are hydrophilic, end up in the homemade buttermilk. If you then add a dash of high-quality vegetable oil with the valuable omega fatty acids to this healing spiced butter (and buttermilk), you have a real fitness fat on your bread. It is important that the spices and the vegetable fat are added to the room-temperature cream in the butter shaker right at the start. Then it works particularly well.
