For the original Spätzle-Shaker flour of the “Spätzle-Shaker” brand, we only use wheat or spelt grains from regional organic cultivation in the Swabian Alb. The Swabian Alb biosphere reserve is one of the unique agricultural cultural landscapes in the southwest of Germany.

If you don't have real spaetzle flour on hand, you can make your own spaetzle flour . This works well if you replace a third of the plain household flour with durum wheat semolina.
If you want more protein in your spaetzle, you can replace up to half of the spaetzle flour with particularly protein-rich flours such as soy flour or chickpea flour.
By adding superfoods such as wild brown millet to the dough, the spaetzle become real fitness partners.
